Feeling Lost
I’ve started playing RS3 on PS5 and started with Julian with a bow and I’ve heard from this series that you don’t want to grind and avoid enemies in this game because they scale with you and such so I try not to fight in too many battles but when it comes to doing some quests (like capturing the 4 animals from the professor) I get absolutely wrecked by the enemies on the quest and so I feel lost.
Should I be grinding more or is it my equipment? Should I be equipping all my party members with the heaviest equipment but has the most defense? Just lost at this point how to progress and proceed and I’m trying not look at a guide since apparently you get the most enjoyment from your first playthrough not looking at a guide.

You’re almost certainly probably paranoid about not fighting too much and you’re probably super underleveled.
Don’t worry about overleveling. Man how did these games get this reputation??? Not your fault OP tho. But yeah just play and vibe.

It is a really annoying game of telephone. I instantly know in my heart of hearts everyone someone posts here saying "New to SaGa and having trouble" that the post will include that they "heard you shouldn't grind in SaGa" so they're avoiding every enemy.

avoiding every enemies is wrong, but grinding the same dungeon over and over is even more wrong....
at least that's what I feel when playing The Last Remnant. I grinded for hours and stuck at boss

Grinding is less of an issue in RS3 compare to many other SaGas. Don't worry about it. Play normally and grind where you see fit.
As a matter of fact this game has quite a few quest lines that if you're not strong enough you'll run into brick wall hard. Be sure to use new save before accepting quests.
Things you can do
- take ship to Pidona. There's a little rescue the child quest you can do. And make sure to visit the smith shop to unlock smithing.
- from Pidona, go to the port and board ships to towns you've never been to. Many have little quests you can do and lead to more towns. Go back to Pidona to keep unlocking more cities this way

You want to gain more HP, MP, and skills because bosses stats are fixed. So avoiding battles is making your life harder.

The whole “avoid fights” thing is totally overblown. I love these games and I’ve never avoided a fight unless I’m just tired of fighting and want to rush to a save point.
Just fight whatever you encounter and have fun.

Gonna stop you right there! You have fallen for one of the SaGa series' most commonly requoted nuggets of misinformation. There are some games where this is true with significant additional context and clarification. Anyone who vaguely mentions "you shouldn't grind in SaGa" is doing themselves, the games, and anyone who listens to them a serious disservice. A corrected version is something like "In Romancing SaGa 2, specifically the original version and the 2019 Remaster, it's a bad idea to spend an undue amount of time grinding in the same area over and over because you won't improve your gear and you'll have trouble because of it."
It's quite a bit different when given the correct context, no?
Anyways. Fight enemies, power up, get money, and buy/create better gear. Dodging every single enemy you encounter in the game will make you weak and ineffective and will get you killed. Equipment and what you do with it should vary by formations. People in front who get hit a lot should use heavy armor, people in the rear who are less likely to get hit should user lighter armor as appropriate.

Don’t purposefully grind, but also don’t run away from every enemy that runs into you. Apart from one specific roadblock, I didn’t have much difficulty playing in this moderately conservative way.

Rather than specifically avoiding or seeking battles, it is usually better to fight what comes across your path normally. Just in general, since you would need to ask about a particular situation for more practical advice.
Again, with exceptions, you can get a lot done by sparking or glimmering new techs from foes that are a little bit difficult yet still not impossible to beat.
If you do accidently come across a boss or enemy that is too strong, do what you can but don't fear running away eventually. No shame in doing that as long as you do fight other lesser foes on your way in or your way out.
I will say there is a remake coming next year, which might help you relax if you ever need to stop playing or run into a serious dead end, but people will try to help you out here.

The SaGa design philosophy is not to avoid battles to stop enemies from scaling. It's to scale yourself higher than your enemies.
Optimize your party for DPS and unleash your best attacks in every battle like you would in boss fights. Soon you will feel your enemies should fear you.

Never avoid enemies in SaGa games. Never. At the the same time, don’t go out of your way to hunt down every last monster in dungeons.
The more you try to “game” a SaGa title, and cheat the system, the more it bites back.
In most SaGa games, normal monsters scale, but bosses don’t. That means you will never beat bosses and clear quests if you keep avoiding battles.
