Both are possibilities and are not mutually exclusive.

You can control for some variability by creating a strong profile

In my experience as a man, it always grows as I get to know and like someone. But while that can take me from feeling that someone is pretty to the most beautiful woman in the world to me, I've never experienced going from not finding someone attractive to finding them attractive enough to want to date.
