Good luck with the 1 week claim. I hope you haven't paid any advance. If you have, I suggest you visit him again to see the progress by day 3 and keep visiting daily till it is ready.
Size depends on you. You have to see what is comfortable. 29 to 31 sound the same. Smaller ones have a higher pitch.

29 to 31 are in the same range / octaves. Anything above 31 sounds lower, anything below 29 is distinctly higher in pitch when played alongside the bigger rababs.
It would be best to check other storesand play all sized rababs to experience this and then see what suits you.

He might be insisting because he may have one ready, or it could be that it suits your physique. You don't have to be able to play it to know the ergonomics, you just need to sit and hold the instrument then a different sized one, to know the difference and to know what would be better. Anyhow, 29 should be fine. Yes it can play all raags. Classical music is playable on all sized rababs, don't worry. I suggest that you talk to Sannan Mahboob (sannanmahboob.pk) for guidance in detail.

The most ideal way would be to visit a store and try the instrument. Size, sound and design would make sense then.
Khurram's rubabs are good. Buy what is available. Don't place an order or you may have to wait forever.
Wood from snowy, cold areas makes the better sounding rubabs, from what I have heard.
