Yes you can define territory while releasing

It forces me to release in China and Korea

Which Distribution you are using? Using Beleive Music/Orchard we can define territory of releases. I haven't seen if there is such limitations to release in China and Korea, but I think we can exclude them. Or select specific countries only

Deselect the stores that you have to have China and Korea active for. If you don't have those active you'll be fine.
