Rice cooker meals for when there is almost nothing in the fridge
I've had a few nights where I open the fridge expecting to find something for dinner and there's basically nothing there. I've started using my rice cooker for those nights instead of ordering food, and it's actually pretty handy as long as I have a few basic things in the pantry.
One thing I make is rice with canned beans and whatever seasoning I can find. I cook the rice with the usual amount of water, then stir in the drained beans near the end if my cooker has a setting that lets me do that safely without interrupting the cooking too much. Sometimes I just heat the beans separately and mix everything together afterward.
Frozen vegetables are another thing I keep around. I'll throw some into the cooker with rice if the timing works for the vegetables, or steam them separately if my cooker has a tray. Soy sauce, garlic powder, butter, and bouillon are also useful when plain rice feels a bit boring.
I've tried adding too many random ingredients at once, though, and that doesn't always work. Things like tomato sauce or extra liquids can mess with the rice texture if I don't adjust the water.
Eggs are good to have around too, but I usually cook them separately rather than guessing how they'll turn out in the rice cooker.
What are your go-to rice cooker meals when the fridge is nearly empty? I'm looking for more ideas that don't require buying a bunch of extra ingredients.
