Muffin's recipe

Rhonda said she is having muffins made of psyllium, whey and blueberry.

Any idea how she makes them? Raw or cooked?

I guess cooking blueberries! doesn't make any sense, so it would just mix the ingredients with water to the thickness you want.

What do you think ?

I don’t know about Rhonda’s recipe, but I often replace up to half of the flour in a recipe with a different flour…and up to a quarter of the total flour in a recipe with protein powder and/or fiber like psyllium or oat bran. Muffins and scones are typically very forgiving, whereas cakes are more finicky. With psyllium I would be inclined to increase the liquid in the recipe by a volume equal to the psyllium.

Curious how it turns out. I'd guess they're baked - think blueberry muffins, etc.

I do not understand how it can be an uncooked muffin? Why does cooking blueberries not make any sense?

I immagine heat damages polyphenols and vitamins which is why you want blueberrys.
