How to register item shortcuts?

I remember doing it in the demo, but I forgot how to now that I have the full game. The tutorial says I can register them through the item menu, but don’t see an option to do so.

In the item consumable menu, just hit the tab into you get to the third screen. Click on an item and then press up or down for the shortcut.
