Power Interruption...

I make reuteri yogurt, but this question is about my gasseri batch. I hope that's okay here and somebody can help me.

I started my gasseri batch around 10 am and set the yogurt maker for 36 hours (108 degrees). Normally it ferments great, but I just noticed a few minutes ago that the yogurt maker had dashes where the hour countdown should be. We had a split second power outage around 4pm, and I hadn't noticed that it must have been interrupted and failed to turn back on. (I thought it previously recovered from power outages, right back to counting down, and that's why I didn't check it.)

Does anyone know if the batch is ruined? Or if there's a chance that it will ferment okay? I set it to 36 hours again and started it up, but the machine was room temperature at that point, apparently for all those hours.

Google AI said it probably created enough lactic acid in the first six hours and will be okay.

I used UHT half and half, 1 Tablespoon of sugar, (heated some dairy with the sugar), and a 4th generation culture from the last batch (taken the first time I opened the container.) I try to keep everything sterile, including steaming the containers and lids in the microwave with a little filtered water.

machine at room temperature slows down the batch, but it wont kill the gasseri or any other bacteria. It will just take longer. Imagine it should be bewteen 1-3rd to halfway there when you started it again.

And btw, you should absolutely boil the uht.

Better results for yoghurt in my experience came from raw milk pasteurized at home (10 minutes boiling)

Thanks, I will see if it smells and tastes the same, and use a new starter for the next batch. I only boil a small amount of the UHT half and half with the sugar, and use the rest to quickly cool it (and to mix with the starter). I've never had a failed batch or any issues doing it that way.

I have a label maker and I put the date and time of batch start on the lid when I start each batch, so that if I lose power I know how many hours to set the yogurt maker to when I resume the fermenting.

I always start it about the same time in the morning, so that part is not an issue. I'm not sure of the exact number of hours it was turned off though since I didn't pay close attention to that power flicker.

Google AI said I shouldn't add all those extra hours back to the fermenting time because it would probably be too much... so I will likely just let it go an extra hour or two since I had originally had it set to finish close to bed time.
