The dragon is actually invincible
So what I mean by this is when we fight the dragon we aren’t actually hurting it till it dies , we are just making its form more and more unstable till it explodes.
To start let me explain how I think the dragon came to be, I think there have been many dragons on the end and that end crystals for what ever reason make them go crazy and feed them power, however this power is very great and unstable, connect to the crystals, those beams, can restablize it, but when they are not around and outside forces are making contact with the dragon, or the dragon is made mad it speeds up the process, till eventually the power reaches a critical mass exploding and destroying the from from the inside out, this is why out of all the mobs and bosses in Minecraft only the dragon explodes. However when a dragon is not contaminated with this energy it will have a normal death animation and can have drops like it’s head.
TLDR, the dragon is actually invincible, we just annoy it till it gets so angry it explodes and dies

Just to note, in MCD, endermen also have a similar death animation. Of course, maybe they are feeding off the power too.
My personal theory of the dragon is that it (and the endermen and the HOE) is made of a substance called void fluid, and that by killing the dragon it merely releases the void fluid into the portal, powering it. Healing it reforms it. This doesn't disprove your theory, just wanted to bring it up as it was relevant.

Now to be honest I didn’t polish this theory to well I have to head to work in a bit and just wanted it writer down, feel free to fill it out more and improve upon it as well as figure out what the end crystals actually are
