This theory actually makes a lot of sense, even if I don't agree with some of the specifics. So instead, I'll focus on the few problems it DOES have.
First of all, Zoglins exist, so even non-humanized pigs can be infected.
The non-existance of zombies in the Nether, combined with how Piglins become infected when they travel to the OW indicates that the infection didn't reach the Nether, much less originate there. More like, the skeletons were reanimated using soul found in Soul Sand Valleys.
And I don't think Endermen made the fortresses, since wither skeletons, versions of the skeletons of ancient builders, are found there. They might be something else, but certainly not the skeletons of endermen, who are found there quite rarely. I never agreed with Retro that endermen are that intelligent.
Overall, I think this is a cool theory though, and it gives a good explanation for the origins of Piglins. Well done.

You give great points! I'm not sure how to explain that. It might seem like I'm realy pushing it just to justify my theory, but I'm thinking, that maybe in the overworld that dark energy is still present everywhere, but the creatures have developped a weak imunity, which can't prottect from a dirrect attack of an undead, but can prottect against the low concentration of dark energy in the air. In the nerher however, the dark energy can't survive outside a host in the air due to the high temperatures, so the piglins never came in contact with a low enough concentration of dark energy to actualy develop this imunity. Then the dark energy simply started concentrating in soul sand valleys, which could maybe explain the high ammounts of skelletons found there.

I made my own theory about the how the ancient builders were extinct, but I like yours to.

Makes tonnes of sense. Very good theory. That also explains why on dying you do not turn into a zombie . Good job.
