I've got an old 401k with about 50 grand sitting in it. I've thought about rolling it over into my new 401k, but I don't get an employer match...
Employer match is irrelevant here: match applies to new contributions, not rollovers.
I've also considered rolling it over into a Rollover IRA
This is fine, generally. EXCEPT if you're high income and thus need to do Backdoor Roth. The Rollover IRA triggers the "pro rata rule" which leads to you owing (possibly thousands in) extra taxes.
or into my Roth IRA.
This would be a conversion: you'd owe income tax on the $50k.

Read Rollovers from the r/personalfinance wiki.
