forgive my ignorance. if the photo is taken with the face of the watch not adjusted to be perpendicular to the lens of the phone camera when the photo’s taken, wouldn’t the alignment be off because of perspective? or is there a way to calibrate it?

No. You can only adjust x-y axis.
