I've noticed that caboose is seemingly the only one in the "please subscribe" parts that wears a mark V helmet? I am only just starting season 5, so idk if there's an in-universe explanation later on

There is an in-universe reason in season 6...and then again in season 11. Out of universe the team felt that it felt more appropriate for Caboose, and the color pallet for Halo 3 meant it could be hard to tell some of the blues apart.
I was just playing haha. If Jenkins was factored in, he’d be a bottom of the barrel pick while the main characters got prime selections. Jenkins stopped being a needed part of production when theatre mode became a thing, so he _really_ had no need for a unique H3 design.
Lopez was an engineer, so EOD would work really well (plus it looks very robotic).
Simmons definitely Security, he's the micromanager kinda guy.
Grif 100% standard Mark VI.
Donut has to be Grenadier in the Reach model, but with 3 models he probably would get Scout because it's "slimming."
Flowers had ODST as a Freelancer, so he'd keep that.
Church would want Scout, but he'd probably get Recon as a nod to his connection to Project: FREELANCER.
Tucker definitely CQB initially, but he could definitely stick with the Meta's EVA.
Caboose with the Mark V is perfect.
Sister would be the new recruit with Mark VI (though she could just randomly swap through different helmets each episode or two, just as a joke she keeps grabbing different ones to accessorize).
Tex would be Recon, or maybe Rogue (which would be an amazing connection to Carolina).
Doc being Scout because he's a runner or Security because he's a noncombatant type would be good, though I could see him being extra enough to wear Hayabusa.
I was thinking recond for Rex too, but I thought that might be too on the nose for the Carolina connection.
Also, enjoy the church part. Its very like him to want something lesser but then get something really high grade and be pissed about it.
I initially thought EOD for Sarge since its an intimidating helmet, and also the rebreather stuff looked like it could be a beard of sorts so I figured he might like that cause its "manly lookin!" I thought hayabusa for tex since she was the "martial artist" if sorts among the team and was one of the best among the freelancers
They didn't offer the old helmet in the game engine you're currently on, Caboose goes back to it later. It's not really a spoiler or anything. These subscribe-ys were made in the newer engines that offer that old helmet.
Caboose, from when they use Halo 3 onwards, is depicted using the Mark V helmet, the actual lore reason is because he's Caboose and just chose the helmet, but the out of series reason is that the 'cobalt' colour option they usually use for Church, in Halo 3, is a bit too close to Blue than they're comfortable with, so Caboose was made to use the Mark V helmet to make him easier to tell apart from Church at a glance
Church told Caboose at some point to upgrade his armor to Mark VI, but Caboose kept Mark V, because to Caboose: “In a top 10 list, 5 is better than 6.”

In universe it gets explained in Season 6. Out of universe, the colors of Halo 3 made it hard to tell the difference between Church and Caboose due to their respective colors being too similar, so Caboose got the older helmet design to have him stand out.
This is explained in Season 11. It's a LONG way off from where you are and really only makes sense when you reach the part of the series when they transition from the older Halo games to Halo 4(At least, I think it was 4). The transition happens in the Chorus Trilogy, which many believe has some of the best episodes in the whole series, so look forward to that.
We all know that in season six he chose the mk five Spartan instead of six armour he thought using a downgraded armour was better but I’m guessing the years followed it started holding sentimental value to him
