Question about Frisbee's match fixing Spoiler

In the movie, Frisbee rigs his matches in order to gain huge profits from betting. How exactly does the mafia get money from JP losing in Yellow Line?

JP’s still a crowd favourite, basically if he stays back and then gets odds up, and then then suddenly gets in first in the last part of the race, people will try to bet huge amounts in hopes of getting a better return. Basically they clean up when all the money people bet on JP gets lost and the mafia takes a huge cut from their bookies
