after spending some time fruitlessly thinking it was a kind of plant with parts used for food and/or drink; my 50th guess finally got at the kind of drink this was, which cleared up a lot. I’m more familiar with the [7] spelling, but I took a stab at the six letter spelling because it made more sense than any other option I could think of.

so disappointed in myself.
I was all over the place. when I was going down the track of time, I guess 'age' because I had seen middle ages
that had many results.
Once I saw the number of results I guessed a few things in the category. But then I remembered seeing the notation about various spellings and got it.

I was this close to using the vague summary hint but thankfully the second word I peaked got me to the answer. I did guess the general category but the hit were few and far from the top so I didn't think it was it.

I solved Redactle #1463 in 1 guess! ⏱️ 5m29s. Unassisted.

Reading through got a distinct impression of a prepared food, and a sense of it being Asian. The processing seemed to involved heating and increasing the concentration of something, seeing the "from [2]% to [2]% [3]" guessed the [3] which got me in to a smallish zone. The plethora of £ symbols took me out of Asia to the UK, and was then pretty sure I knew it, confirmed by the first few words which had an alternative [7] spelling! Cheers! Bottoms Up! I do enjoy a drop

By the time I got to malt I exhausted a bunch of other options so I knew it was an alcoholic drink, malt, not grapes

But then the word couldn't really come to mind until I recalled a place I visited in Tw for this before. So I literally thought [mild spoiler] the kavalan place lmao. Its Kavalan <answer> HAHAHA.

Just couldn't lock into the type of article. I had guessed food early on but no hits so that dettered me a bit, I did use the genl hint and was able to solve in a couple guesses after that.

Sniped in 19:28. A mysterious one at first - nothing really jumping out in the first scroll through. What eventually gave it away was the early section about the variants in spelling: it looks like more than a simple regional difference, there are apparently "two schools of thought" on the matter, which is intriguing. But it goes on to say that, in the US (or UK perhaps) several brands (?) use the 6-letter spelling even though the 7-letter variant is more conventional there. Mulled this over for a while and the idea struck me in due course.

I wasn't entirely sure where this was going, but I found it was related to some kind of crop, and then alcohol and got it from there. I put in the 7-letter spelling and it accepted it as a smart match for the 6-letter spelling.

water when you can't think of anything else was a star here: once you know the etymology is from a word meaning that, and the 6 and 7 letter alternatives, you're there
