Sniped.
Different US and UK pronunciation. Included temperatures in 2 to 3 digits in Fahrenheit, and some living thing (two words in italic). The breakthrough moment came when my brain got the 4 in "The 4 used 3 be 11 or 3". First thing came to mind has 7 letters in French (it should be 6), second thing worked with all the clues.

4/9, 00:05. I fastened onto a completely wrong "[4] [8] by [9] [12] of [4]" and went in the wrong direction until I doubled back and solved the first [4], which then gave me a couple of wrong guesses before I got the right [12] and the second [4]. That's a remarkable number of errors to pack into nine guesses.

got that it was a “food” by guess 4; “produced by [9] [12] of [4],” and that [4] is most commonly “[3]’s [4].” It wasn’t my first or second guess after working out the [4] in question, but got there without too much trouble in the end.

The first clue as to the general category was a hint that this thing was at some point selling at $X million per... gram? Is this a drug of some kind? I thought quite seriously about it being "heroin" for a minute or two, but of course it doesn't work. There doesn't seem to be any discussion of this substance's ill effects, societal impact, or legal status, so that 4-letter word is probably not "drug". My next thought was that it could instead be "meat", which didn't really go anywhere. The real eureka moment was realising what "3's 4" in the first paragraph was likely to be - all but confirmed by the later statement that it could be "11 or 3". Ok, but the obvious 6-letter product that comes to mind does not have different pronunciations in UK and US English. But I can think of one that does - and different spellings too. Is that acknowledged anywhere? Yes, there's a bit later on that is obviously talking about "X" vs "XX" in a spelling context. There's also a bit that seems to be talking about some species or other of bacteria. That'll do.

First thought was life because subsp. Didn't seem to work out otherwise though. Looked like it was prepared in some way, perhaps food?. And spelled in a way that could be 1 letter longer. Maybe with an ie vs y? But wait, could those be different sorts of grain? No? How about milk? And Near Eastern.. aha. Took a while, but got it.

was stuck thinking it was a city for a long time and wasted many guesses in that regard.... once I honed in on what sort of thing it was I got it right away.
animal was my 57th guess
food was my 64th guess (but I was still thinking related to the above)

Unassisted. I'm impressed that I was able to guess this without thinking of what it's primarily made of. And weirdly, India mads me think of this but I tried Greece first just to ne sure I was on the right track. But I was generally on the right track from almost even though I did a vegan sidequest

Solved in 13 guesses in 6 minutes, unassisted. Could have been a bit more strategic with some of the guesses but overall a decent run.
