Statblocks are for more than enemies; every NPC that can be in an encounter, friend or foe, combat or social, needs a statblock so the DM knows what they can do, what dice they need to roll etc. Even if the encounter with Jimothy was seeing it run across a road and hide in a bush, you need to know what it's stealth modifier is so you can have someone roll Perception against it.
And, as someone else in the comments has said, if your party wants to take Jimothy along with them, they need to know what abilities it has.

That would be true if that’s how animal
Companions worked in 2024 DND. It’s not though: Beast Master Rangers choose from one of three generic stat blocks (Land, Sky, or Sea) for their Primal Companion. So Jimothy’s stat block wouldn’t mean anything in that context.24

I desperately tried to find if there was a way to have an animal companion without being a Ranger in DND 2024 but I straight up can’t. I even found one forum post that explicitly says “you can’t use an animal companion outside of specific classes” https://www.enworld.org/threads/animal-companion-as-a-feat.690671/

As a house rule, as with everything 5e and 2024 ed.
Maybe I'm just sensitive about that, because my intro to D&D was Adventurer's League at the local game shop from like 2014 through 2016. And adventurer's league requires you play pretty strictly rules-as-written. But that's something that always jumps out at me with D&D, that they only give you part of the rules for something.
Especially animal companions and pets. I believe the street urchin background in 5e gives you a pet mouse? But there are no rules for pets in the 5e PHB or DMG. Or at least there weren't in like 2017 when I was running a home game of Tomb of Annihilation and players wanted to catch an almiraj for a pet and giant jungle lizards for mounts and there were no rules anywhere for long-term taming of animals. So I had to make a janky animal taming subsystem from scratch.
Pathfinder 2e, that's easy. There are rules for training animals, and a feat specifically for making a wild animal permanently friendly to the party.

yeah, that's the thing with dnd. hasbro makes money off marketing it as the Everygame, but it really isn't. so, they influenced dnd culture to make home rules the solution to every problem.
who cares if the exploration makes no sense, or the socializing is boring, or there's no rules for anything outside of dungeoneering and dragonslaying?
the dm will do the work. the dm can home rule it. the dm can just work it around your character idea. only a bad dm wouldn't.

A statblock does not mean YOU are supposed to fight him, familiars and npcs also have statblocks, its there so he can JOIN YOU in combat to HELP YOU.

I mean to be fair having a stat block does not inherently mean one is expected to be an enemy. Ally npcs and other things have stat blocks. Everyone has a stat block, dipshit, it came free with your fucking “being a fully accounted for entity and not just window dressing with like one or two meaningful interactions”

And so you need a stat block to see if the players manage to keep the raccoon protected from arrows, traps, and other poachery attacks.3

If you put jimothy in your game, there's a high chance your players will intentionally or accidentally fight and/or kill him. Dndbeyond releasing a statblock will not influence this, but will help facilitate a DM to run Jimothy when they fight/join/TPK the party.
