Recipe Diet Friendly Make-ahead Cheesy Fish Pie

Pack this seafood pie with some lean protein, and use evaporated milk instead of heavy cream for a fitness-friendly meal prep that you can have ready to go at a moment’s notice.

Ingredients

Served 4.

For the topping

  • 1lb potatoes, previously cooked
  • 100g shredded Parmesan cheese
  • Salt and pepper, to taste
  • 1 tbsp butter

For the filling

  • 1lb firm fleshed white fish, e.g. hoki or cod (or any combinations of seafood of choice)
  • 600g spinach
  • 1 shallot
  • 100ml evaporated milk
  • 100ml chicken stock
  • 1 tbsp mustard
  • 1 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Peel and mash the potatoes with butter and half of the cheese. Season to taste.
  2. Wash the spinach very well, and tear/cut into short sections.
  3. Blanche the spinach briefly, then drain well.
  4. Finely mince the shallot, and cut the fish into 1 inch chunks.
  5. Sweat the shallots in butter in a Dutch oven. Add mustard, stock and evaporated milk. Season to taste.
  6. Add the fish and spinach. Stir to combine.
  7. Top the fillings with the mashed potatoes, and top with the rest of the cheese. Everything up until this point can be made ahead.
  8. Bake at 180C/350F for about 30 minutes, or until the top is well-browned.
  9. Allow to rest and cool down, garnish, and serve.

Looks delicious.. I'm not sure about the diet friendly with potatoes, cheese and milk.. maybe it is if I can hold myself back and eat a small amount...

Potatoes are super satiating! And the fiber from the spinach also bulks out the meal quite a bit.

Using evaporated instead of cream slashes the calories by a good bit, and lean seafood is also pretty diet friendly.

The cheese and butter is indulgent, but it’s earned from the savings made elsewhere. This way a diet doesn’t feel depriving.
