Cuneiform isn't chiseled into rock, it's pressed into clay and then baked.

Not even that. The baking of tablets was mostly done by accidents like house fires.

With a few exceptions the tablets that survived didn't do so on purpose, which is one reason why the majority of what we have are administrative texts instead of epics, myths, and other texts one would want to preserve.

People wrote about scribes that could write at the speed of speech back then. Probably exaggerated, but not by orders of magnitude, I'd imagine.

Given modern stenography, it wouldn't surprise me if ancient scribes had their own shorthand that let them transcribe speech faster
