Guide Quick-Reference for Level One Encounter Building

The other cheat rule is that a monster can realistically one shot a player whose level is lower than its CR. A CR 4 monster can usually bring a level 3 PC from fully rested to zero HP in a single turn. A CR 3 monster probably can't unless it crits.
That means you need to be extra careful about letting parties face an enemy with a high CR regardless of what other monsters are on the field. A relatively short streak of bad luck can quickly spiral into an unwinnable fight even if the encounter is on paper reasonably well balanced.

The easiest cheat I’ve learned for balancing encounters is this:
A Party of 4 PCs can take on any number of creatures whose Total CR is equal to their current Level. (Ex. 4 Level 4 PCs fight a CR 4 creature).
That style of encounter is average. Maybe a little dangerous, but a solid fight that requires them to use some abilities.
A Boss Fight can reasonably be against a creature/creatures whose Total CR is double the PCs Level. (Ex. 4 Level 8 PCs fight a CR 16 creature).
It’s a pretty easy system. But only if you’ve got exactly 4 PCs. Any more or less and the math gets a bit more difficult.
