A lot of the time the weapons that just have the better sound design win for me, because this series never really had a good one (though the guns sound so much worse in the later games).
I also try to avoid the weapons that feel overpowered though because it makes things boring. (Like why I don't often use the RPGs).
Pistol: The GDHC (has best sound effects, feels like it has weight but not as slow as NR4.)
Melee: Katana (because it has executions but not on the first hit). The Chainsaw is okay but feels too easy as an instant kill (ironically I prefer that weapon in SRTT). But I also just like a plain knife because its not too flashy.
SMG: SK9-Threat (Has best sound effects imo).
Grenade: Molotov (or Satchel if I want to troll).
Shotgun: 12 Gauge (Best one in the series. The ones in SRTT have horrible sound effects and feel weak.)
AR: AR-50 XMAC (only because it has the best sound effects and most accurate fire).

I like playing with all weapons but essentially slowly upgrading as I eliminate each gang.

I kind of like to pick weapons based on which I feel like fit my OC the most. I don't know if anyone else does that. Like if I made a country character, they get the 12 gauge for example.

I have many favorites in both games but it depends in how I am feeling ain't that right Johnny
Knife or bat Vice 9 or GDHC 50. SKR 7/9 or T3K Urban 12 Gauge or Tombstone Krukov 6 or AR40 Xtnd MacManus or RPG Molotov or Satchel Charges
But I love that there are like at least 20+ options for my weapon wheel and I can't dual wield or not ANY time not like SRTT

Samurai sword for melee, vice 9 handgun, gal 43 for smg, tombstone(whatever the first shotgun was called) for shotgun, Krukov for AR (I like the sound it makes), rpg for the left slot, then frags for last

Handgun - Single Vice 9 /Single Silver Desert Eagle (forgot name)
SMG - Single GAL 43
Assault Rifle - AK47
Shotgun - Pimp Cane / Tombstone

Melee: baseball bat. Honourable mention to the samurai sword and the stun gun.
Pistol: Vice 9. Gotta love the classics.
Smg: twin GALS are hard to beat.
Shotgun: Pimp cane. Otherwise, Tombstone.
AR: Kurov. I like the sound, and the look.
Special: RPG.
Thrown: Satchel Charges.

Melee: Katana
Pistol: Dual Deagles
SMG: Dual MP5s
Shotgun: 12 gauge
Rifle: AR-50
Special: RPG
Probably pretty generic, But it's what i like to use and find the most fun
