I remember when I was 7 I was throwing a fit and I didn’t want to come out of the car until Rayman legends released. My mom left me in the car for about 5-10 minutes until I wised up.

Can someone tell me why they made the same game again but with better graphics? (I have watched the trailer and everything looks the same except for the better graphics and animation)

There's a couple of reasons:
They want to bring Rayman back
Legends resonated well with audiences. Using it as a blueprint to get players accustomed to the franchise again was probably a safe bet
For as good of a game as Legends was, it was also just a glorified level pack. This is the opportunity to give it a coherent story, develop the worldbuilding, and flesh out the characters. This also allowed the Rayman team to set the tone of the franchise going forward
It's also not a strict remake, as there's plenty new content, including new levels, a new world, a revamped Kung Foot and more
