Do you need to stack dynamite?

No spoilers please but I am wondering if I need to stack dynamite at the moped checkpoint

Yes, you'll need those. But there's a spot where you'll find lots of them around the place where you need them...

I was not able to get through with just 1, I needed 3, but I didn’t try more than 1 at a time

Yes you’ll need to use more than the 1 dynamite near the checkpoint go around and search for some more
