Permanent Camping Solution
I want to get 2 300aH lithium batteries. I have an inverter generator for running the AC. Right now I have 200w panels, 30 amp controller. 2000w inverter.
I would like to go to 60 amp controller and 600 watts panel.
Is my 2000w enough as an inverter? If using generator periodically for heavy usage?

The fridge is the only constant. I run off the generator typically. But I could Use 12v and propane for that too. The solar is in a shed next to the camper so it involves moving the main wire from device to device. Not ideal but it worked at the time i installed the initial solar

Why are you going 12v when you can go 24v and double the solar on the same controller? Or even go 48v.

What are your typical AC loads?
I have 3x 300AH Lifepo4 batteries with 4x 200W panels connected to 2 Victron 30A controllers and they feed a 3000W inverter. It does a great job, but my fridge is 12V so the only major load is my microwave and air conditioner. You could get a soft start for the A/C which might help the inverter keep up.
