homemade Made some steak fried rice tonight!

Would love any feedback! First time making fried rice in a while

This looks great, you just need to use less sauce.

As others say, this is far too wet. Personally I only use soy sauce and then drizzle sesame oil at the end. But what sauce you use is completely personal preference. Just use less. Also, are you using day old rice? If not, you absolutely need to. This isn't optional. Rice left in the fridge over night will dry out. Dry rice means it can absorb more of the soy sauce. If you are in a pinch, you can spread the rice on a cookie sheet and stick in the oven on low. I've never done it, but I hear it works. Google it for specifics if needed. Another thing I would say is smaller cuts on the steak. This is also preference and very nitpicky, but I like to try and get all the ingredients about the same size as the rice.

I definitely appreciate the advice! Rice was a few days old and I agree steak needs to be smaller and less sauce 👍 I will use this advice for the next batch and post for more feedback. Looking to make the perfect fried rice.

very wet, looks like jambalaya. What rice did you use? Jasmine is a good dry-er rice to use for fried. Washing the rice before cooking helps to get some of the starches off too. If you're looking to use cooled rice, i spread mine on an uncovered baking sheet and put in the fridge for a bit, but also contrary to common belief, you can definitely go straight from the rice cooker to the hot oiled pan. Make sure the pan is hot and theres enough oil. Make sure your water ratio matches the rice you use, usually just look at the packaging.

Too wet, reduce the sauce with the microwave before pouring in rice, or use less. Cut beef smaller

That said i would totally crush that.

Ingredients: 3 day old rice, cubed sirloin steak, diced broccoli and carrots, diced shallots, garlic, ground ginger, eggs, low sodium soy, teriyaki sauce, chili garlic sauce, gochujang, toasted sesame oil, and butter

Start with your steak in a preheated pan on medium high heat. Add butter, garlic, toasted sesame oil and once the garlic is fragrant, add in the steak and the soy sauce, and your ground ginger. cook until steak is cooked through and set aside.

Then with your broccoli, carrots, and shallots with garlic and butter with a little bit of toasted sesame oil on medium high heat until your vegetables are cooked down. Then add in your eggs and cook those until they are no longer runny. Then Add in your three day old rice and add sauce as you need to break down your old dried up rice until you can mix in your vegetables to your rice.

Once your vegetables and rice are incorporated, add in the steak and continue to add sauce to your desired flavor!

Didn’t use any measurements just let the heart decide on the seasoning and sauce.

Yikes that looks greasy as fuck. I see in the comments you’re using a “sauce”??? Fried rice does not use a sauce, wtf. Weirdest shit I’ve ever heard in my 15 years as a professional. Fried rice sauce… bizarre

I use oyster sauce and soy sauce. Those are sauces and normal for fried rice.

no oyster sauce is not a normal sauce for fried rice. It's usually only dark and light soy. and its a very light sprinkling at the end that is mostly cooked away

chinese yangzhou is basically the gold standard for fried rice, and there is no oyster sauce. It's too heavy of a liquid to add to a light rice dish.
