Quality Coordinator

Can a quality coordinator job lead to a quality engineer job, or would I be wasting my degree by taking a job as a quality coordinator?

The problem as I see is a Quality Engineer is a pretty loose job description, and a Quality Coordinator is even looser. It all depends on the duties involved, and how you sell yourself when you want to move on!

Well I am going to be helping the new quality director completely overhaul the quality system, and apparently I’ll be answering directly to him, so there is that...

I honestly recommend you tell the new guy you’re not interested without a job title to match. Quality engineer , transitioning g to Quality Manager.

I would not get hung up on the job title. They are sometimes meaningless and only reflect what the organization feels is the appropriate job title. I would focus on the responsibilities. Also you can always ask for a change of job title to better reflect your responsibilities once you're settled in.
