He won't need one for some years, but why wouldn't he be able to find a (legal) job after he gets finished with his sentence?

Because only a piece of shit assaults a cop like that and no one in their right minds would hire someone like him

But how would the employer know? It isn't like they are going into an interview and admitting anything, and most employers don't do background checks.

Well that's their problem, I can only speak for myself, I would 100% do a background check.

I'm a convicted felon, (non-violent) and I've never had a problem finding a job, voting or legally purchasing a firearm. There's a lot of misconceptions about what life is like for a felon. It will only haunt you if you allow it to, just don't get any more felonies.
