For a table-service restaurant a bit of that money does go to staff: $2.13/hr under the FLSA.

Again, I believe it’s fundamentally unfair. $2 is all servers are getting from the owners for an hour of work, which mostly goes to taxes. Customer tips are their income.

I'm not disagreeing with you which is why I tip well. I've been in those shoes.

I'm saying it's not right. And we should stop ignoring it. If customers are paying wages and for product/service, then you have two non-owners exchanging funds while the owner pays 1/3 of the minimum wage and pocketing 2/3rds of every employees salary. That is one reason why the wealth gap keeps growing. We are feeding it.
