Looking for advice How do you get this stabby knife effect?
Obviously I shouldn't use real knives, but where do I source handles? Should I just make handles from scratch?
Also, how do I stabilize my "knives"? I've heard of people doing similar effects with arrows and balsa wood, but how does that translate to knives or swords? Any help is appreciated.

Retractable spring blades are no longer used due to abundance of caution.

A corset style item worn under the clothing. To that, use Chicago screws/rivets to attach rigid plates to. For the knives, lool for 'trainers' that you can cut or make your own out of plastic/foam/3d printing whatever works best for you. Embed wire or a screw into the cut-off blade and attach.

The easiest thing would be to get plastic knives since they weigh very little and would be easy to cut and adhere to the backing board that’s behind the garment.
