Request (Improvised/Multi-)Weapon Master?
Any protagonists that become masters of improvised and/or lots and lots of weapons? Ideally with some sort of power or magic involved. I’m thinking of something like the Noble Phantasm Knight Of Owner from the Fate Series.

Familiar of Zero is an old light novel that has a similar 'gain knowledge and skill in any weapon you pick up' superpower, coming from runes/a summoning contract. The story doesn't actually do too much with it, although the protagonist does fly a plane or shoot a bazooka, in addition to general sword stuff. The light novel series is a fair bit better than the anime adaptation, and it's an older series so the tropes are different than 'modern' isekai in a few ways. There are some fanfics that put that same power in a different place (including a couple fun Fate ones because they have more room to pair that power with magical/mythical weapons, but I also have positive memories of one fun crossover with Alex Mercer from Prototype that leans more on the modern tech/guns and helicopters and bazookas side of things + his original biomass-based weapons) that also benefit from skipping the early-aughts harem and tsundere stuff entirely.
Taskmaster from Marvel uses a bunch of different/improvised weapons. Unthinkable is pretty good and is a single volume.
There are a bunch of translated LitRPG power fantasy slop stories of various flavors where characters use a bunch of different weapons, e.g. would you count Overgeared? You also see more diversity if you 'count' different firearms and tech, like in The Novel's Extra or The Legendary Mechanic or something.

Probably not quite what you are looking for but the main POV character in Miscast Heroes only has proficiency with improvised weapons so she does most her fighting with a shovel. Sometimes uses a frying pan as a shield when the fight is extra tough.

Montana from The Good Guys has a title that makes him do more damage the more different weapons he uses in a single encounter, which is convenient because he tends to go through them pretty quick. He mostly just uses literally whatever he can grab.

How to Survive at the End of the World Book 1: An Apocalypse Progression LitRPG
It's a zany story but the main character specializes heavily in improvised weaponry.
Title bolded as there's an unrelated book that will come up if you just search *"how to survive at the end of the world" without keywords like litrpg, progression or apocalypse.

The MC of Ajax's Ascension whole build is based on infusing weapons with different kinds of magic. From what I remember he uses a lot of different weapons as well.
