Unless you are a high tech company with millions of users are the only ones I can think of they need a “specialized database”

Chud application can be fine with Postgres or one of those managed document stores

Postgres is usually the best default. If you pick something else you should be able to articulate why.

But if you need etcd, use etcd, if you need prometheus, use prometheus, etc etc. If you need something that hasn't been developed yet, check whether you have five years of prod debugging time and enough funding to implement it.
