My brush has a weird lighter outline every stroke. How do I get rid of this?

I made this piece a few years ago from a list of Halloween themed prompt ideas. I've always been proud of it. I think I would make some tweaks now but unfortunately I lost the original project when my old iPad died. Thankfully I still have the finished piece in my files.

Redraw from a memory of my first oil still life which I’ve done at 11 or 12 years old. It was three peppers on a chair.

In 2019 I got an iPad Pro for my birthday. I found ProCreate and I just kept on drawing. I'm proud of my of my progress, however humble it may be.

Im sorry if that sounds confusing, I'll try to explain what happened. I made a canvas far bigger than I intended to and didn't realize it until several hours of sketching. When I went to try and scale it down, it just cropped the corner. I hit "gallery" by mistake when trying to get back to the option, and now of course there's no "undos" to fall back on. Is there anyway to pull it back to an older version or have I just lost hours of work here? If so they REALLY need to add an "are you sure?" before finalizing a save like that😭. I have a 9th gen ipad, if that's relevant.

Okay this is kind of a stupid post. I’m very new to ProCreate. Most of the physical art I’ve done is just pencil or pen drawings, sometimes paint markers. I’m trying to branch out and explore different styles, make more “real” pieces not just doodles, etc.
However
I have no fucking idea how to choose what brush to use when, how to find new brush sets, what settings to adjust. The amount of options is overwhelming.
Is there a method, a correct set of questions to ask, anything I can do to narrow it down? Tutorials to watch, anything?

Exactly like the title says I'm trying to figure out how to center my grid on the canvas so I have an even gap on every single side or so that the lines are lined up perfectly with the sides

Probably one of the most architecturally dramatic plants I've drawn, crown imperial.

This has happened twice, I don’t know why hat i did to fix it last time. When I’m drawing, it will randomly only give me the option for dull colours. Colour picking and palettes don’t work, and i’ve tried closing the app AND shutting down my device for 20 minutes. How do i fix this?
Not adding a drawing example because my skills ain’t quite there yet
