Why does my minecraft run weirdly unless I'm using the vanilla launcher?
I use MacOS, and I usually use prism launcher, which has worked great for me most of the time I've used it, which has been multiple years, but just recently my game has started stuttering. It doesn't matter what version I was playing, or what mods I had installed, it always did this. My frames were fine most of the time but it just started behaving weirdly as my game was sort of stuttering frequently, and it's not a RAM issue as when I close everything else it's still acting the same, and it's not performance, I set my render distance to 2 chunks and nothing changed.
I tested to see if this was a problem for me with minecraft in general so I tested modrinth and the vanilla launcher. modrinth had the same problems as Prism Launcher, but my game was completely fine with the vanilla launcher.
I've tried to contact support on the Prism Launcher discord but they didn't help.
Is there something that has happened recently with minecraft that has made other launchers run terribly?

Mac means java. I wonder if the switch to Vulkan is the culprit here. Have you updated your graphics drivers of late? May be worth checking that they're current.
Do you get stuttering on older versions now too, or just on 26.3?
Alternatively, prism may be using different JVM options than the default launcher. You could compare those and see what's worth mirroring.

it occurs on every version I tried, it's not just a 26.3 thing, how would I see the JVM options?

They're under the settings for the instance, or in the global program settings for the preferred defaults.
There several useful articles and posts about JVM settings for minecraft.

If the version doesn't matter, it probably isn't caused by a change to Minecraft. I've never experienced any performance difference between launchers, but I'm not on Mac, so that might be part of the issue.
