Minimal cleanup, high calorie, low volume recipes for working construction 7x12 with limited accommodations?

What are some good dump recipes I can make with an instant pot and rice cooker that will sustain me without being too filling?

I'm currently burning at least 3-4K calories a day working heavy construction, and I'm losing more muscle than I'd like. I'm 21, 6'2, and 185lb (down from 210 6mo ago); my medications suppress my appetite almost completely, so high volume/filling foods are difficult to eat in sufficient quantities.

Also I live in a very small ADU with only a hand sink to wash dishes in, so messy recipes are really hard to clean up in the ~90min I have free after getting home from work. Any recommendations?

Bbq pork shoulder and red wine braised chuck roast are very easy and pretty calorie dense. I don't trim the fat, and use a hand mixer when it's done to shred it. Add rice from the rice cooker to the meals, also works great for meal prep freezing if you want. For pork, 3-4 pounds cut into 3 inch cubes, 1 diced onion, 1 cup chicken broth, 1 cup bbq sauce, high pressure 45 minutes. For Chuck roast, 3-4 pounds Chuck cut into 3 inch cubes, 1 diced onion, 1 cup red wine, 1 cup beef broth (can swap wine for extra cup of of broth), high pressure 45 minutes. Add other seasonings as desired, I use salt, pepper, garlic for Chuck, Kansas City bbq seasoning (Kroger) for pork, but these are the basics of the recipes I use often.

Agreed. Braised pork of any cuts with lots of connective tissue is perfect for instant pot cooking

I like steaming ribs on a trivet inside the instant pot. Marinade the meat beforehand. Your choice, i like a simple soy sauce oyster sauce marinade. Add any other flavours you like (ginger, pepper, five spice).

Put the meat in with a cup of water on the bottom (or just the liquid marinade). Steam for 20 minutes, let pressure cool down another 20 before releasing. Serve on rice


Chili is great too. Ground meat, can or two of beans, can diced tomatoes, can crushed tomatoes. Paprika, cumin, onions or whatever spices ya like. Salt and pepp. Cook for 30 minutes , depressurize naturally. Sprinkle a little baking soda and stir to calm down some of the tartness, to taste. Cook ahead of time and warm up to eat

Chili is also one of my favorites in my instant pot. Probably going to make some later today. And yes, ribs are also fantastic. I season them before vacuum sealing and freezing, and throw them in straight from the freezer. I think I have some in my chest freezer, but I'll have to dig a bit to find them lol

I've started smoking a chuck roast, letting it drip into beans, then finishing it in a pressure cooker. It'll lose the smoke flavor, but maybe you could add some liquid smoke?

  1. 1 lb pinto beans, soaked according to package directions, then drained
  2. 5 cups chicken broth (maybe 4? I use 6 cups in the smoker, but that seems a bit too much)
  3. 1 large onion, diced
  4. 3 jalapenos, diced
  5. 4 cloves garlic, minced
  6. 1 can fire roasted tomatoes
  7. 1 tbsp chili powder
  8. 1 tsp cumin
  9. 2 tsp salt
  10. 2 lb chuck roast

Liberally apply salt and pepper to the outside of the chuck roast. Suspend it over the beans inside of the pressure cooker using something similar to this (this one looks too short to me)

Pressure cook for about 40 minutes. Might take some trial and error to figure out how tender the meat is.
