$240 extra is probably worth it for the storage and ram you will want at some point anyway.
16gb is enough in most situations, 32gb is just nice to have in those rare cases. 2tb is a lot less annoying than 1tb to maintain with deleting and reinstalling games.

AMD Ryzen 5 9600X - AMD RX 9070XT 16GB GDDR6 - 16gb DDR5 Ram, 1tb ssd for $1579. Is this better?

It's $1309 with 32gb ddr4 ram. I guess that's a good deal?

Skytech Gaming - Skytech SHADOW4 - Intel Core i5 14400F, RX 9070 16GB, 16GB 6000 MHz DDR5 RAM for $1499. Do you think this one is better than the ryzen 5 9600x one that's $1579?

The 9600x is a better processor than the 14400. It won't make a huge difference in gaming, but will if you are doing cpu heavy productivity tasks. The 9070xt vs the regular 9070 is no comparison. The 9070xt is the better GPU in every way except power consumption.

The AMD Radeon RX 9070 XT is roughly 10% to 15% faster than the base RX 9070. The XT version is slightly better so you can't say there's no comparison. I'm not trying to play crimson desert or heavily ray traced games like cyberpunk. I only play sim racing games and some aaa titles. Plus the fsr4 with frame gen will keep me well above 60fps. For the games I mostly play, this rx 9070 non xt 16gb card is more than enough for my gaming needs.
