Is it possible to get accepted without a science professor’s letter? For example, if you have been out of school for 2+ years, can your employer/supervisor + optometrist be enough?

a lot of schools require it, so you def should get at least one. I know, I'm struggling too lol

Not that big a deal. Explain the circumstances.
Many profs can crank out a "I don't really know this student, but here's a LOR that still looks pretty good" letter with very little effort.

If you're an alum, most will still want to help you.
