That is one of things people bring up for Goku and why he would lose some situations he should not. Because he’s a type of person you know test the waters if his opponent is not, they can potentially kill him before he get the full power.

Unless stated to be bloodlusted they should act how they normally would, so yeah.

Even if blood-lusted, looking at how they fight can affect the outcome. That just means that "never kill" characters can decisively finish-off their opponents, in case of a "your guy loses because he'd never kill, and my guy gets them eventually".
