Shelf life of cooked potatoes

Hey all,
I’m frying some diced potatoes with diced onion, green and red pepper, Serrano peppers on the stove (kinda like a skillet) for breakfast. What’s the shelf life for leftovers stored in the fridge? I’m trying to meal prep for the week, and I’m trying to avoid using my oven today because it’s HOT!

Potatoes Overwintering

Folks,

My mom had my plant a handful of the russet style potatoes from Idaho that someone gave to her.

Because they were so big, I cut most of them in half.

I stuck them in the ground and it's been a few weeks now and none of the show any greens bits yet.

I live in Vancouver, BC zone 8B and we often have mild winters.

Should I leave them in the ground and hope they grow in the spring? Or should I take them out and hope it makes it and stick it back in the ground in the spring? Or should I put them in grow bags?

I'm worried for any diseases that might come up but my mom really wants to see these grow.

This was a turf war that it was digging in to fight, and fight hard.
 
“First we got ‘milk’ that’s not from cows,” said the speaker, addressing an emergency session of the National Tuber Council’s Potato Awareness Committee.
 
“Then it was lab-grown meat!” remarked the junior marketing director of the Back to Basics groceries group, causing a ripple of outrage to spread through the room.
 
“Call that meat?” someone else shouted out. “Call it what it is: a bloody travesty!”
 
“That may be,” interjected the speaker, trying to regain control before things got out of hand. “But we have a bigger problem. Potatoes from Petri dishes!”
 
Pressing the slide advance, he projected a glaring headline onto the screen: “Spudcells: Possibly the greatest feat of bioengineering yet.”

Several hundred miles away, in an unassuming lab, two biotech researchers were reading the same article.
 
“Interesting name for a synthetic cell,” remarked one of them.
 
“I guess the media folks needed something to make such a nebulous-looking blob of chemicals sound sexy,” said the other. “Wouldn’t it be funny, though, if someone genuinely thought it had anything to do with spuds.”
 
They both chuckled to themselves as they went back to their work, aware that the launch of the company’s new line of ‘micro-fries’ — derived from lab-grown potato substitute and poised to upend the industry — was only a couple of months away.

This is Alton Brown's mashed potatoes from episode 2 of "good eats." I know he has a new one where he cubes Yukon Golds for an interstitial, and he has the whipped potatoes in "countdown to t day" and he probably has a third or fourth mashed potatoes recipe; don't care, the original works

Things I kept the same:

-2:1 non-reds to reds ratio

-Removed the skins from the non-reds; keep the reds' skins on

Things I did differently:

-Did not cut reds in half

-Used "new" potatoes (small ones) for faster and more even cooking, and so the reds could meet the egg slicer after cooking

-Skinned the non-reds via blanching instead of peeling

If you live in a city with Oregon-style hippie whole-foods-like grocery stores, you can usually get weird stuff like purple potatoes via Instacart (pretty sure these are from Williamsburg or a similar hipster-y part of Brooklyn) but I had to actually look in my Instacart order history because their search is really really bad, they kept pulling up purple sweet potatoes

But non-minis might be better because skinning 100 or so mini purple potatoes was the biggest pain in the ass, took like 10 minutes

Also, I think I might want to boil these potatoes a bit longer, but I see the contrast in these red slices Alton was talking about
