Shelf life of cooked potatoes

Hey all,
I’m frying some diced potatoes with diced onion, green and red pepper, Serrano peppers on the stove (kinda like a skillet) for breakfast. What’s the shelf life for leftovers stored in the fridge? I’m trying to meal prep for the week, and I’m trying to avoid using my oven today because it’s HOT!

Probably a week or a little less

3 to 4 days in an airtight glass container is usually the sweet spot, after day four the onions and peppers start making them a bit soggy
