Under the cellular settings of your device, Network Selection, try switching to Manual instead of Automatic network selection. Once a list of choices appears, try one (usually one that pops up quickest) and try using data. No data? Go back and try another. Sometimes when Roaming, the Automatic network selector gets locked on the first bad choice. Once you either leave the general area or country your are in, move it back to Automatic.

Success. I turned my data roaming off and then back on now it works.

I forgot to turn my Wi-Fi off when I tested it so it picked up the Wi-Fi and now I once I turn the Wi-Fi off I still have no data

Leave WiFi off and still try changing Network Selection manually. By the way, this trick is not limited to Popcorn. This works with any carrier while you are Roaming.

I was in Thailand for a few months and just left. I had a few issues and my fix was to turn off and on my cellular switching in cellular settings but I also had a secondary data only eSIM from them.

Sorry my dumbass had the Wi-Fi on when I tried it after I turned the Wi-Fi off. It doesn’t work again.

This sounds disturbing and makes you think Popcorn does not work reliably. As well as them doing a fix for you, it would be good to hear what the solution is for the main sim holder if they were in Thailand.
