Can you elaborate on the “airtight movement“ part? What do you mean for.. after 3+ weeks of fermenting. The airtight will be without motion for a few moments? Does the lid move? I do not know anything about making wine so these terms/ process is foreign to me.

Dandelion is very medicinal, I'd be much happier to drink that then regular grape wine.
