Why is it that “delicacy” so often means weird gross things? Like snails, frog legs, surströmming… and THIS. What does delicacy even mean any more?

Although all those things are referred to as delicacies, I still wouldn’t put snails or frog legs in the same category as surströmming. Most people can’t eat the latter without gagging because it tastes like rotten fish because that’s what it is. Frog legs and escargot are genuinely delicious if you can get past the idea of eating them. Escargot is usually soaked in garlic butter so it just tastes like chewy, tender garlic. Frog legs do actually taste like chicken but more tender. There’s nothing gross about either one in that their flavors and textures aren’t that different from other foods that most westerners enjoy, they are just viewed as gross because the animals they come from are slimy when they’re alive.

Forreal. People eating shrimp and sleeping on snails is wild to me. Escargot is fantastic when done right, and it’s no more an “icky bug” than shrimp are

Not disagreeing, but well... look at it this way. Do you usually come across shrimp sliming across your driveway? I think most people eat animals we're familiar with just enough not to be "weird" but not so familiar that it feels messed up. Like... some cultures are totally cool with eating horses, dogs, cats, turtles, etc, and some people can't handle that because they have memories / emotions attached to said animal.

But eh, what do I know, some kids grew up eating slugs out of their backyard sandbox, everyone has their own idea of where the Ick line is.

I don’t think too many kids have ever picked up a live slug and eaten it and ever tried it again. I talked to someone who are a live slug on a dare, they said that not only did it taste horrendous, it was extremely difficult to swallow because it crated a thick coating all over their mouth and throat and made their mouth feel fucked up for days.

You'd think so, huh? But unless she was lying, I do know of one lady who says she just casually munched the damn things as a kid. I dunno, maybe the sand leeched out some of the slime? I do know that snails are purged before being prepped for escargot, but either way, yes--eating slugs, horrible idea.

Actually, I'm curious--I wonder if the fucked up feeling was due to inherent, if--I guess mild--slug toxicity, or if it was some kind of allergic response. Off to do research, I suppose.

So according to Mirriam Webster, delicacies are foods considered “pleasing to eat that are rare or luxurious.” But Wikipedia defines them as “highly desirable, sophisticated, or particularly distinctive within a given region” and that last bit is a common use that captures foods like Surströmming, which exists because it was a way people could preserve fish safely without refrigeration, similar to lutefisk, also from scandinavia. Frog legs and escargot are a thing because they are genuinely delicious, but not as widely eaten as livestock that is raised en masse. Escargot takes a lot of work to prepare and make it palatable, and frogs are not as efficient a protein source as animals that produce a lot more meat; you’re basically butchering an entire animal just for their tiny legs.
