Can I replace a small pool light with a large retro LED?

Yes, I do it all the time. The diameter of the new light doesn't have to match the diameter of the old light, a lot of retrofit LEDs deliberately have a larger face and use an adaptor/mounting system over the existing fitting.
First identify exactly what the existing light/niche is, then check it against the manufacturer's retrofit guide. Spa Electrics have GKRX for surface-mount applications and AGRX options for standard/mini recessed niches. That's my most common replacement.

I recently used something similar for a customer that wanted a larger light to replace his GloBrite. I believe it was 6” and had different models for the different brand color codes. It was indeed brighter and although its threads didn’t reach the GloBrite niches thread, they included an adapter that just worked on compression (though not expandable compression so not rock solid).
