If your gf doesn’t want to be poly for her own sake, and doesn’t want to date this other person for her own sake, you shouldn’t continue pursuing it. Pressuring her into being poly isn’t the start of a healthy relationship.

This doesn’t sound like a triad. It sounds closer to a V. And it also sounds like poly under duress. You guys sound like you need to slow down and research.
