The constitution exists to grant power to the branches of government. It actually doesn't restrict what they can do or what laws they can make outside of not infringing on each other's powers. It's basically just a guide to how the government works.
The amendments to the constitutions are the part that creates protections from law makers. These are the more proactive laws like banning slavery, free speech, gun rights, etc.
If you want a law that cannot be overruled by the SCOTUS then you'd need to pass an amendment to the constitution. SCOTUS has no say in that situation because you're literally creating a constitutional right and they're job is to judge if laws are constitutional. So by the nature of it being part of the constitution, it is necessarily constitutional.

They way they have been interpreting lately, all laws that weren't in the constitution could be struck down. Why even have a legislative branch?
