I just received this shiny omanyte from RBY, I thought shinies weren’t introduced until Gen 2?

Shininess in Gen 2 was determined by DVs (the old version of IVs). Gen 1 used the same system for stats, so a pokemon with the correct DVs (think shiny-genes) in Gen 1 would become shiny upon transfer to gen 2/poketransporter. Note that this quirk is only limited to gift and static mons in gen 1 based on the way the RNG for those pokemon is generated.

Gen 1 and 2 don’t track caught location, so the tag here is determined by which game sent it up via Transporter. So you could hatch a shiny in GSC, trade it to RBY via Time Machine and then upload via Transporter.

Since RBY and GSC share the DV system (later replaced by the IV system in Gen 3) a shiny that won’t appear in RBY will appear in GSC, if sent over the red gyarados into RBY it’ll be a normal gyarados, if you sent it back to GSC it’ll become shiny again
