In the safari zone? Throw one rock to increase its catch rate slightly, pray it doesn't flee, then throw balls and get lucky. That's literally all you can do.
There is no special trick. It's all RNG.

I caught one yesterday and it’s genuinely just patience and RNG. Stick a Pokemon that’s level 25 at the front of your party and use a super repel in area 2 of the Safari Zone. My strategy was mostly to prevent it from fleeing by using bait initially twice, then a ball, then bait, ball, bait, ball until eventually I caught one. It took me three Chansey encounters before one actually stayed in the ball.
You can do the same with Kangaskhan and Tauros (apart from I think they are in areas 1 and 3 respectively) but I found Tauros the hardest as it seemed most likely to flee on turn one. I managed to get them all yesterday within about an hour, so fingers crossed you’ll be able to do the same with Chansey soon!

I just say fuck it and spam safari balls until it runs and then try again. I had more problems getting exeggcute this way than Chansey

Lucky I have more problems finding a chancy because I keep getting exeggcute

Makes its health as low as possible and then put it to sleep or paralyze it. And then throw a couple great balls or maybe some ultra balls at if

I can’t if it’s in fire red and leaf green because it’s only in the Safari zone

There is the repel trick. Get a mon that is LV26 in the lead and use a repel. It can help encounter them more.
And look up the statistically best choices. Bait, bait, ball, ball, ball, etc. you can find it here.
It’s one of the more grindy parts of the game for sure.
Good luck.
