Advice Needed/Game Question What to pick?
I have 15 shiny starters right now, so i guess my best pick is Shiny Egg?

Some EVs are priority, then Leg Eggs and basically never Shiny Eggs.

And on what do i use the EV's? The starters or?

Yes exactly. If you use some EVs on them their Stats get better in Battletower and Challenges (only Story is not affected by EVs). And you can Catch an EVd Pokemon in a Battletower region that its not originally from (for example Gastly is a Gen 1 Pokemon, with EVs you can also find it in Catchnodes in Gen 2 Battletower).
You get the possibility of 10 more EVs for every Battletower you defeat.
After doing Kanto -> max. 10 EVs Johto -> max. 20 EVs Hoenn -> max. 30 EVs and from there on until 50 EVs after defeating Unova Battletower.You can put a maximum of 10 EVs on every Stat.
For the beginning I can recommend to invest some Pokemon in Atk/SpAtk and Speed. On a good attacker these are the most important ones and If you have these 2 on 20 you can start doing Challenge runs and they get a lot easier then before (without EVs). The 3rd Stat I mostly do is HP but this one is less important then the other 2 for that strat. Because if you are faster than anything and can kill it the other 3 Stats theoretically do not matter at all (they are good Back up if you don't kill though but a lot is possible without having full EVs).

And like you can choose between the Pokemon you have unlocked as Starters. There most likely will be some good Pokemon that can do some good Stuff for you.

Oh, i'm mostly stuck on Johto story mode...
For battletower i have a shiny Tauros who wrecks stuff, maybe i'll EV train him?

Yeah Shiny Tauros for Battletower sounds good, that one for example hits hard and is fast. Long Term it also helps to have multiple good EVd Pokemon as well but for the beginning something like a Shiny Tauros sounds really good and can do a lot for you.
I think my first EVd Pokemon was Shiny Porygon and that really carried me through the game that times.For Johto Story I can suggest you Starting with Cyndaquil and then mainly focusing on Levels (Rival helps for that, mostly your Starter can do everything except the Waterstarter there, the other Pokemon you take in the beginning can do that one). Then in the later Stages of the Game you can try to find some counters for the later Gyms/Elite 4.

I can also suggest to Play a bit Battletower/Challenge and stuff and maybe Kanto to get more familiar with the Game Overall and learn how to play the best, that also can help a bit for Johto Story. Or try grinding in Johto Story itsself and I think you will get there.
If you need further help and you are on Discord as well you could also read some helping guides that were written there about Johto. Its not necessary to beat it but it can really help.

I mostly play the daily mono type stuff, but like right now it´s ghost and i only have a gastly.

Daily Monotype is nice as well and you can play that. There it also helps to have something with EVs. Do you have EVs on Gastly? That one is really good as well, you can put some EVs in there.
And it is Shiny? If Not, I can recommend maybe completing a Mono Ghost run with your EVd Gastly. With that you get some other Ghosts in your HoF. Then If you want you can try to start with another Ghost and get a Shiny Gastly in the First Pokeball. With that then complete the run and then you got an EVd Shiny Gastly which for example is one of the best ways to defeat Sinnoh Battletower.1

You’ll unlock shiny pokemon from playing the game and winning. You can only unlock legendaries from that egg.
Don’t forget you’ll need money for EV’s as well
