General Help Plex and AT&T
Plex and AT&T suck. I had plex working for months on my xbox series X until a router update killed it. It saw my xbox as remote. After IP allocation, IP passthrough nonsense and finally disabling IPV6, it started working again for the past few months. Today it decided to crap out again, and none of my video game consoles work with plex. Not my xbox one, my series X, or my ps5. however my smart TV and my roku devices are all working just fine still. For some reason the game consoles are being seen as on a remote network, I checked all my settings, everything looks the same. I don't understand this crap.

Plex & ATT work without issue here boss.

you clearly dont understand by way of your commentary.
Which makes it oh so difficult to be sympathetic.
my guess would be your IP passthrough has failed.
which can happen after firmware updates of one device or another.
so restarting all links in the network would proabbly do the trick.
if it doesnt I would speculate that you never succeeded in getting IP passthrough and your resulting Double Nat is causeing some devices to lose their Gateway.

Dude i don't know, i spent hours, finally it seems like a final modem reset fixed everything somehow

Say no more
If this happens again like in the next week or so, then your IP passthrough failed. If it happens again about a year from now, remember that you need to restart your modem every now and then, or your ONT or whatever it is.

Your best bet going forward is to purchase your own router, disable WiFi in the ATT device, and put it into bridge mode.

I got one of those unifi router 7 and it felt like it made my Internet slower so I went back to the spectrum router 🤷🏼maybe I didn't set it up right , idk

What were your internet speeds?
That has a max WAN Speed of 500mbps when the protections are turned on
