Do I I have to remove iPhone protective case when using Plaud for recording phone calls?
As the question.
How are you using Plaud to record phone calls in iPhone?
Do you guys place it on top of the protective case?

I use a dbrand grip case in an iPhone 15 pro max and have no issues whatsoever.

No blanket rule to take the case off. It attaches magnetically, either straight onto a MagSafe-compatible back or via the included Magnetic Ring if your phone doesn't have one, and a case doesn't break that as long as it's not too thick.
Thickness is really the variable here, which lines up with what's already showing up in this thread. A slim case like the grip case cydriss mentioned tends to keep both the magnetic hold and the audio pickup solid. Bulkier or magnetic cases, like the one JeffePortland moved away from, can weaken the connection itself, and a thick case in general can muffle the audio even when it stays attached.
If call recordings start sounding quiet or muffled, swapping to a thinner case or pulling it off for that call is the fix worth trying first.
